Digital cameras capture images as in little squares called pixel elements, known as pixels. So, a mega pixel is equal to one million pixels.
Digital images are made up of thousands of these tiny, tile-like picture elements. The more pixels, the higher the image resolution, the higher the resolution the sharper and crisper you picture will look. Resolution relates primarily to print size and the amount of detail an image has when viewed on a computer monitor at 100%.
The number of mega pixels is one of the main aspects, but is is not the only factor for producing great images, Other factors such as camera sensor, the optical quality of a lens and what format you are shooting in play equally important roles. That means you can have a 12mp camera and you pictures can still be garbage.
To determine the right choice for the number of mega pixels you should use, when buying a digital camera ask your self one question. How big do I plan on printing the photos I take? that should help determining the an area of mega pixels that u should be looking at, as far as which camera to get thats a whole 'nother post.

Here's a chart from design215.com on the mega pixels and printing photos from them.
inches @ 300ppi (numbers inside colored boxes are megapixels)
This is a pdf explaining the chart further.
